Da Vinci’s Coffeehouse uses the la Pavoni Espresso Machine, special ordered and hand made in northern Italy. The machine requires the barista to pull a long lever to produce an espresso shot, which is the action that coins the term “pulling a shot”.

Pulling the lever pressurizes the hot water and sends it through the coffee grounds at just the right speed to properly extract the oils and rich flavors of the bean. This is how we obtain “the cream of coffee” which is the true secret of Espresso. Da Vinci’s espresso will always have a thicker and more intense flavor, paired with greater complexity and depth of fragrance.

It doesn’t matter how good the bean is if you don’t have the right machine to “pull the shot” and reveal its deepest richest qualities.
